A hearty, classic homemade vegetable beef soup featuring tender pot roast, a medley of vegetables, and a light tomato-based broth. Perfect for comfort food lovers and ideal for slow cooker or stovetop preparation.

Ingredients

Scale
  • 1 pot roast (about 2 pounds)
  • 2 russet potatoes, chopped
  • 1 bag frozen seasoning blend (or 1 cup chopped onion and other aromatics)
  • 1 bag frozen peas
  • 1 bag frozen green beans
  • 1 bag frozen corn
  • 4 large carrots, chopped
  • 1 (32 oz) container beef broth
  • 2 (10.75 oz) cans tomato soup
  • 1 can filled with water (use empty tomato soup can to measure)
  • Salt and pepper, to taste

Instructions

  1. Season the pot roast with salt and pepper.
  2. Place the pot roast in the slow cooker with half a can of beef broth and cook on LOW until fall-apart tender (about 6–10 hours).
  3. Remove the cooked roast and shred it with two forks.
  4. In a very large pot, heat 1 tablespoon oil and sauté the chopped carrots and frozen seasoning blend until the carrots are tender.
  5. Add the shredded beef, chopped potatoes, frozen vegetables (peas, green beans, corn — add straight from the freezer), the rest of the beef broth, tomato soup, measured water, and salt and pepper.
  6. Bring the soup to a boil, reduce heat to low, cover, and simmer about 1 hour to allow flavors to blend.
  7. Adjust consistency by adding more water if needed while simmering.
  8. Taste and adjust salt and pepper before serving.
  9. Slow cooker alternative: add all ingredients to the slow cooker, set to LOW for 6–8 hours, remove and shred the beef, then stir shredded beef back into the soup.
