An easy and cheesy slow cooker casserole with seasoned ground beef, frozen hashbrowns, and taco-flavored cheese soup that delivers comforting taco-inspired flavors in one pot.

Ingredients

Scale
  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 oz packet taco seasoning
  • 10.5 oz condensed cheddar cheese soup
  • 30 oz frozen shredded hashbrowns (do not thaw)
  • 2 cups shredded taco-style cheese, divided

Instructions

  1. Cook 1 lb ground beef with 2 minced garlic cloves in a skillet over medium heat, breaking up the meat until no pink remains.
  2. Drain off excess fat from the browned beef.
  3. Stir 1 oz taco seasoning into the warm beef until evenly coated.
  4. In a large bowl, combine the seasoned beef, 30 oz frozen shredded hashbrowns, 10.5 oz condensed cheddar cheese soup, and 1 cup shredded taco-style cheese; mix until combined.
  5. Lightly grease a 6-quart slow cooker.
  6. Pour the mixture into the greased slow cooker and smooth into an even layer.
  7. Sprinkle the remaining 1 cup shredded taco-style cheese evenly over the top.
  8. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2.5 hours, until bubbly in the center and potatoes are cooked through.
  9. If desired and your crock is oven-safe, place under the broiler for 1 to 2 minutes (watch closely) or transfer to a baking dish and broil briefly to brown the top.
  10. Let the casserole rest 5 to 10 minutes before serving.

Notes

Keep shredded hashbrowns frozen when adding to prevent mushiness and overcooking., Drain browned beef well to avoid a greasy casserole; lean ground beef or turkey can reduce fat., Use low-sodium cheddar cheese soup or reduce taco seasoning to lower sodium., Avoid lifting the slow cooker lid during cooking to maintain time and temperature., If casserole is runny at the end, stir in cream cheese or extra shredded cheese to thicken., To get a crispy top without broiler, transfer to baking dish and broil until golden., Make-ahead tip: Assemble and refrigerate for up to 24 hours before cooking; add extra cook time if cooking from cold., Can swap ground beef with cooked shredded chicken, ground turkey, or add black beans and corn for a meatless option., Add diced green chiles or jalapeños for spiciness., Sprinkle crushed tortilla chips or Doritos before serving for added crunch.
