  9. Sprinkle chopped fresh cilantro over the mixture and serve with warm flour tortillas and your favorite sides.

Notes

Can substitute chicken thighs for breasts for richer, juicier meat; adjust cooking time accordingly., Use any preferred red salsa; chicken broth or water can be used instead of salsa if desired., Can use homemade fajita seasoning (4-5 tablespoons) instead of store-bought packets., Additional vegetables like zucchini or mushrooms can be added for extra nutrition., For low-carb option, serve over cauliflower rice or wrapped in lettuce leaves instead of tortillas., Leftovers store in airtight containers in refrigerator for 3-4 days or freeze for up to 2 months., Reheat gently with a little broth or water to keep chicken juicy., Frozen chicken breasts can be used but should be thawed for even cooking; add extra cooking time if using frozen., No need to sauté peppers and onions; adding in last hour keeps texture., Adjust spiciness by adding jalapeños, serranos, cayenne pepper, or hot sauce as desired.
