Quick and wholesome cereal bars made with cereal, nut or seed butter, and natural sweetener; perfect for a portable snack or breakfast.

Ingredients

Scale
  • 3 cups cereal of your choice (smaller shapes like Cheerios, Fruit Loops, or Rice Krispies work best)
  • 2/3 cup peanut butter or your favorite nut/seed butter
  • 1/2 cup agave, honey, or brown rice syrup (use agave or brown rice syrup for vegan option)
  • Optional: 1/2 teaspoon salt
  • Optional: 3 tablespoons protein powder

Instructions

  1. Line an 8-inch pan with parchment or wax paper.
  2. If nut butter is stiff, warm it gently in short bursts in microwave or over low heat until easily stirrable.
  3. In a large bowl, combine cereal, nut or seed butter, and sweetener; add salt or protein powder if using, and stir until every piece of cereal is evenly coated.
  4. Transfer mixture to prepared pan, lay another piece of parchment on top, and press very firmly to compact the mixture.
  5. Chill the pan in the freezer about 30 minutes or refrigerate until mixture firms enough to slice.
  6. Use parchment to lift slab from pan and slice into about 9 bars or preferred size; chill completely and use a sharp knife, wiping blade between cuts for clean slices.
  7. If adding a drizzle or coating (melted coconut butter, white chocolate, etc.), chill again until layer sets before cutting.

Notes

Pressing mixture firmly is key for bars that hold together and don’t crumble., If using maple syrup instead of agave or brown rice syrup, add more nut butter to compensate for thinner consistency., Warm nut butter just enough to stir easily to avoid oily bars., Use smaller-shaped cereals for better hold., For neat slices, chill slab completely and use a sharp knife, wiping blade between cuts., Bars can be customized with various mix-ins like cocoa powder, vanilla, mini chocolate chips, freeze-dried strawberries, crunchy peanut butter, mini marshmallows, or coatings., Store bars at room temperature for 2-3 days, refrigerated up to 1 week, or frozen up to 3 months.
